Dried Oyster Mushroom Mee Sua (rice noodles)

My mom used to make this for me on my birthday. Rice noodles (mee sua) being very long has an auspicious meaning of long life, hence eaten on birthdays. This is one of my favourite, taste of mom’s cooked food!
Ingredients (serve 2)
- 10 dried oyster
- 10 mushroom
- 2 tablespoon of dried shrimps
- 2 bowls chicken stock (boil with chicken bone, chicken legs for 3 hours)
- 2 - 4 bunch of Mee sua (depends on your serving size and appetite)
- 2 eggs
- Salt to taste
Method
- Prepare the stock, either using ready made (stock cubes, or stock in cartons) or make your own by boiling with chicken bone and chicken legs for 3 hours.
- Rinse the mushroom, dried oyster, and dried shrimp. Soak for 2-3 hours with water in separate bowls (just enough water to cover them, except mushroom that will float)
- Cut and discard away the stem of the mushroom. Cut into halves if they are big.
- Fry “pocket eggs”, which is frying the egg like sunny side up, but before it is fully cooked, fold into half like a semi circle, hence pocketing the egg yoke inside, and continue frying until cook.
- Bring the stock to boil, add in the dried oyster, dried shrimp, mushroom, with the water that was used to soak them into the stock and boil. (You pour the water in slowly, as there may be some sand at the bottom after soaking and you can discard them). Simmer for 30 mins.
- Add in the fry eggs and boil for another 5 mins. Add salt to taste.
- In a separate pot, boil a pot of water. When boiled, throw in the noodles (mee sua) and move it around to loosen. Let it boil for about 2 mins, and remove the noodles and strain dry.
- Put noodles in a bowl and pour in the soup with the ingredients (oyster, mushroom, shrimps, egg).
- Serve hot.

Potato Carrot Soup

Ingredients
- 2 potato
- 1-2 carrot
- 1 big yellow onion
- 1 tomato
- 200 grams pork ribs
- 1 1/2 liters water
- Salt to taste
- dash of ground white pepper
- Spring onion (optional)
Method
- Peel the potato, and cut into chucks of 3 cm size
- Peel carrot and cut into wedge chucks (2-3 cm size)
- Peel Onion, and cut into quarters
- Wash tomato and cut into quarters
- Wash pork ribs
- Put all ingredients 1 to 6 into soup pot and bring to boil. Simmer for 1 ½ hours.
- Add salt to taste.
- Serve hot with dash of ground white pepper, and optional some chop spring onion.

Watercress Soup (西洋菜汤)

Here is another slow cook soup (煲汤) recipe.
Ingredients
- 1 or 2 bunch of watercress (sold in bunches usually with the stems)
- 5 dried red dates
- 1 honey date (金丝蜜枣) (dried dates with sugar)
- 200 grams pork ribs
- 2 dried scallop (干贝)
- 4 dried oyster (蚝豉, 蚝干)
- 1 tablespoon wolf berry (枸杞子) optional
- 2 liters water (some will dry up during cooking)
- Salt
Method
- Pick the leafy portion of the watercress and separate from the stems, usually more fibrous and with roots sprouting form the joints.
- Plug away the roots if any.
- Wash, and for the stems (usually not eaten, but can be), bundle them up with a cotton string. This is just to help to remove them and discard if you do not wish to eat them. (alternatively, you can keep them to boil a cooling tea, 凉茶)
- Wash all ingredients. Put all ingredient in a stock or soup pot with water, bring to boil and then turn down flame to very small and allow to slow boil for 3 hours.
- Remove the bundle of stems if you wish to discard them.
- Add salt to taste, and serve hot.
You can also cook this in slow cooker for 4 hours.

Black Bean Soup with He Shou Wu (何首乌)

This can be drink as usual day soup. This soup with the He Shou Wu is also a Traditional Chinese Medicine (TCM), that known to help hair growth and darkening of grey hairs.
Ingredients
- 3/4 cup Black beans
- 5 dried red dates
- 1 or 2 dried black dates
- 200 grams pork ribs
- 2 dried scallop (干贝)
- 4 dried oyster (蚝豉, 蚝干)
- 1 tablespoon wolf berry (枸杞子) optional
- 1 small piece of He Shou Wu (何首乌)
- 2 liters water (some will dry up during cooking)
- Salt
Method
- This step is best done days before the cooking. Heat up a pan without any oil, with low heat, stir fry the black beans till the skin split open. When cooled, keep in air tight container. (you can prepare a few sets as it can keep for 2-3 months in air tight container without moisture.). I was told that the beans are used immediately to cook soup after pan frying, it is a bit “heaty”.
- Wash all ingredients 2 to 8. Put all ingredient including the black beans in a stock or soup pot with water, bring to boil and then turn down flame to very small and allow to slow boil for 3-4 hours.
- Add salt to taste, and serve hot.
You can also cook this in slow cooker for 4 hours.

Corn and Carrot Soup

Here is another slow cook soup (煲汤) recipe.
Ingredients
- 2 fresh corn on cob
- 2 carrots
- 5 dried red dates
- 200 grams pork ribs
- 2 dried scallop (干贝)
- 4 dried oyster (蚝豉, 蚝干)
- 1 tablespoon wolf berry (枸杞子) optional
- 2 liters water (some will dry up during cooking)
- Salt
Method
- Peel away all the husk leaves and the silk of the corn, wash and cut into 2 or 3 sections.
- Peel carrot and cut into chucks.
- Wash all other ingredients.
- Put all ingredients, and water in a soup or stock pot, and put to boil. Turn down flame to very small and allow to slow boil for 3-4 hours.
- Add salt to taste, and serve hot.
You can also cook this in slow cooker for 4 hours.
