Fry Cucumber with Dried Shrimp (虾米)

Ingredients
- 1 cucumber
- 1 tablespoon dried shrimp (虾米)
- 1/4 teaspoon sugar
- ½ teaspoon salt
- 1 teaspoon light soya sauce
- ½ cup water
- 2 tablespoon cooking oil
Method
- Wash the dried shrimp and soak it in half cup of water for 1 hour.
- Cut the top of the cucumber and rub till the foams appear (to make it less bitter). Wash and cut the cucumber length wise into half and then quarters. Cut and discard the seeds. Cut the cucumber diagonally into thick strips.
- Heat up wok, and add in oil.
- Drain the dried shrimp (Do no pour away water), and fry in the heated oil till fragrant.
- Add in the cucumber and fry for 1 min and pour in the water used to soak the dried shrimp.
- Cover the wok and let it cook with low heat for 10 mins. Open and add in salt, sugar, and soya sauce. Mixed around.
- Serve hot.

Potato Carrot Soup

Ingredients
- 2 potato
- 1-2 carrot
- 1 big yellow onion
- 1 tomato
- 200 grams pork ribs
- 1 1/2 liters water
- Salt to taste
- dash of ground white pepper
- Spring onion (optional)
Method
- Peel the potato, and cut into chucks of 3 cm size
- Peel carrot and cut into wedge chucks (2-3 cm size)
- Peel Onion, and cut into quarters
- Wash tomato and cut into quarters
- Wash pork ribs
- Put all ingredients 1 to 6 into soup pot and bring to boil. Simmer for 1 ½ hours.
- Add salt to taste.
- Serve hot with dash of ground white pepper, and optional some chop spring onion.

Spinach Omelette Sandwich

Simple recipe, pack with nutrients and fibres of spinach and tomatoes. Picky children will also love this.
Ingredients (serve 2)
- 4 slices of bread (white or cheese flavoured)
- 2 eggs
- handful of spinach leaves (amount may vary)
- 1 tomato
- ½ teaspoon salt
- 1 tablespoon cooking oil
Method
- Wash spinach, cut into small pieces.
- Heat up pan, add ½ tablespoon oil, and cook spinach till soft.
- Beat eggs in a bowl and add in the soften spinach and salt, continue to beat.
- Add the other ½ tablespoon oil into the pan, and pour in the egg mixture. Flip over when brown, and remove when both side are golden brown.
- Cut into 2 portions, and serve in bread sandwich with tomatoes.

Simple Mixed Broccoli Cauliflower and Carrot

This a very simple dish, when you want to get something out easily without messing out your kitchen. This can be use as side dish for your western steak main course.
Ingredients (adjust the amount to your liking)
- ½ broccoli
- ¼ cauliflower
- 1 carrot
- ½ teaspoon salt
- ½ teaspoon sugar
- 1 tablespoon oil (I prefer olive oil, healthier)
Method
- Wash broccoli and cauliflower and cut into smaller pieces
- Peel carrot and cut into slices.
- Rinse the inside of a cooking pot (with thick bottom, to spread out the heat better) with water to wet the inside. First put in cauliflower and then carrot and then broccoli (in this order as cauliflower need more heat to cook compare to broccoli)
- Cover with a fitting lid, and put on stove with very very low flame. (we do not want to burn the vegetables, but using the water content to create steam and slowly cook the vegetables)
- Do not open while cooking, steam will start emerging after about 10 mins, and leave it to cook for another 3 mins after the steam emerge. (or 5 mins if you like it softer)
- Open lid, drip in the oil and sprinkle the salt and sugar, stir well and serve.

Rosti (Fry Grated Potato)

This is probably not the original Swiss way (not sure how to cook it), but this way works. Good for snack, or with some sausage as a meal.
Ingredients
- 2-3 large potato
- 2 tablespoon cooking oil (or butter)
- ½ teaspoon salt
- dash of pepper
Method
- Peel potato, and cut them into thin strips 1-3 mm, or grate it. Wash to get rid of some starch and drain dry. Mix in the salt and pepper.
- Heat up a flat frying pan (non stick better), put in cooking oil, and add in the potato strips. Flatten it into a pan cake.
- Cover with lid and cook with low heat for 10 mins (to cook the potato)
- Open cover and up the heat to medium and fry till golden crust is form at the bottom.
- Optional, you can also brown the other side by flipping it over, which is a bit challenging.
- Serve on plate with the crust side up.
- Serve with ketchup.
