Spicy sweet and sour sauce

You can use this sauce for many dishes like pork for fish.  This is the same as the basic except this is spicy.

Ingredients

  1. 3 chinese table spoon of tomato ketchup (option: replace 1 spoon of ketchup with plum sauce)
  2. 1 chinese table spoon of sugar
  3. 1 chinese table spoon of soya sauce
  4. 1/4 teaspoon of salt
  5. 1 teaspoon corn flour
  6. 1/3 cup water 1
  7. 1 teaspoon of minced garlic
  8. 1 chinese tablespoon cooking oil
  9. 1 teaspoon of chilli paste, or 1 chinese table spoon of chilli sauce.

Method

  1. Mixed ingredient 1 to 6 and item 9 in a bowl.  (tip, add the flour last, and after adding, leave it to sink into the water before stiring, and this will avoid the lumpy flour effect) 
  2. Heat up sauce pan or work or frying pan, add oil and garlic, stir fry till fragrance and lightly brown.
  3. Add in the mixture and bring to boil, simmer till consistency is right.
  4. Add in pre-cooked item to coat them or simply scoop the gravy into a bowl as a sweet and sour dip.

Basic Fried Rice (炒饭)

 Ingredients 

  1. 2 chinese tablespoon cooking oil
  2. ½ teaspoon of ginger in strips or chopped
  3. 1-2 shallots peel and sliced
  4. 1 egg
  5. 1 bowl of steam white rice
  6. 1 chinese tablespoon soya sauce
  7. dash of pepper 
  8. ¼ cup of water.

Method 

  1. Heat up the wok, put in the cooking oil, ginger and shallot and fry with low heat till fragrance and very lightly browned. 
  2. Turn up the flame, and add the rice and stir till rice are lose and hot (some steam coming out). 
  3. Push the rice to 1 half of the wok, leaving the other half exposed,  add a little oil to the side without the rice, pour in slowly the wiped egg, stir the eggs till cooked and in small bit and pieces. 
  4. Stir in the rice and mixed thoroughly.  Put in a dash of pepper, soya sauce, and water.  The amount of water is just a guide, it depends how soft you like the fried rice to be. 
  5. Stir and mixed thoroughly until all the water has been absorbed by the rice.  
  6. Serve hot.

Doing fried rice is one of the best dish you can try as a beginner, the reason being you are not likely to fail.  Success gains you confidence. Do a basic fried rice to gain your confidence in cooking.

Banana Toast

  Ingredients

  1. 1 banana  (may need half if the banana is big)
  2. 1 slice of bread, or you may use bread loaf
  3. 2 thin slice of frozen butter.

Method

  1. Peel the banana and slice into slices
  2. Lay them evenly on the bread.
  3. Put the butter slices on the banana.
  4. Put on a metal tray or baking foil, and put in oven toaster for 3-5 mins.  The metal tray will prevent the bottom from burning that fast while we want the banana to be soften and the butter melted and seep in between the bananas into the bread. 
  5. The end product, we should get a crusty bottom, and soft bananas and a nice butter fragrance.
  6. Serve hot.
