Pan Fry Salted Prawn

Ingredients
- 10 big prawns (important for the prawn to be fresh)
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 table spoon brandy or Chinese rice wine or hua tiao (花雕) (optional)
- cooking oil for pan fry.
Method
- Wash the prawns, do not de-shell, but you may cut away some of the legs and feelers.
- You may also cut the top and bottom using a scissors to remove the intestines.
- Season the prawn with salt, sugar and wine, set for 30 mins.
- Heat up the frying pan, add in cooking oil and pan fry the prawn till red cook.
- Serve hot.
